Lanzhou is where halal Lanzhou beef noodles come from — hand-pulled at 5am on a bend of the Yellow River — and the classic start of the overland Silk Road corridor into Gansu and Xinjiang.
Lanzhou's claim to fame is a bowl of noodles, and the claim is deserved. Lanzhou beef noodles — lamian, known across China as — were invented here by Hui cooks and are handed across the counter from about five in the morning: hand-pulled wheat noodles, clear beef broth, slices of braised beef, coriander, chilli oil. There is a reason the city wakes up for it.
Beyond breakfast, Lanzhou is a river city in a dry mountain corridor, which makes it the natural place to begin the overland Silk Road. From here the Hexi Corridor runs northwest past Wuwei, Zhangye and Jiayuguan to Dunhuang and the Mogao Caves — a route with mosques and halal kitchens the whole way.
